The emulsifiers work on linking the milk fat globules with water which imparts full dispersion especially after homogenization process.
The stabilizers are protecting milk protein, increasing the viscosity to the required level, building a matrix between milk protein and other ingredients, which gives the product the rich smooth mouthful.
The stabilizer is designed to enrich the foam production & stability while using in Cappuccinos.
Components are carefully selected to stand pasteurization and sterilization process as in long shelf life UHT milk production.
