The stabilizer builds a matrix between milk protein and other ingredients, contributing the network formation; this gives the product an innovative firm structure, appearance and smooth mouth feel.

The stabilizer is designed to set yogurt to enrich the viscosity, body, texture, cut spoon, creaminess and inhibit syneresis as well.
